Mixed Veggie Quinoa Salad

Quinoa is one of my absolute favorite things to eat. It's loaded with protein and is a great substitute for rice. So for all the carb lovers out there, get your quinoa on! It's a great way to sort of scratch that itch and get your fix without resorting to yucky empty carbs. 

I'm also a huge meat lover but I think it's really important to go without a few nights a week and give your body a break. So the other night I made this amazing veggie quinoa salad. It's super easy, filling and healthy!! 


Ingredients:
 1/2 cup of red bell peppers
1/2 cup of cucumbers
1/2 cup of mushrooms
1/4 cup of red cabbage
1 tbsp of Balsamic vinegar
1 tbsp of olive oil
pepper 


1) Chop up all of the veggies

2) Cook the quinoa ( I always use chicken or vegetable broth instead of water for more flavor)

3) As soon as the quinoa is done, add the veggies, pepper and balsamic/olive oil and toss

It's as simple as that :)
